Gyoza Recipe below:

Ingredients:

  • 2 teaspoons sake*           *Your local grocery store may not carry
  • 2 teaspoons Mirin*                   these, check online as needed.
  • 1 egg
  • ½ head of cabbage
  • 1 lb ground pork
  • 1 bunch green onions
  • 2 teaspoons ginger
  • 1 tablespoon soy sauce
  • Gyoza wrappers – try checking near the tofu in the produce section

Directions:

  1. Clean and chop cabbage and slice the green onions.
  2. Mix the ground pork, mirin, sake, spring onions, cabbage, ginger and soy sauce together. The mixture should be a little on the wet side, but it should hold together like a sloppy meatball.
  3. The original recipe we followed said to place a tablespoon of the meat mix in the wrapper, but we couldn’t get more than half a tablespoon to fit without ripping them. Practice makes perfect!
  4. Pleat! Fold wrappers in half over filling, reading a semi circle. Take one side of the wrapper and make crimps along the edges for a decorative pattern–like the pleats of a skirt–and press along the edges to seal the two sides together.
  5. Heat vegetable oil in a large skillet over medium-high heat. Place as many gyoza in the skillet as can fit in a single layer. Fry the bottoms for 1 to 2 minutes.
  6. Place gyoza in a steamer and steam for 5 minutes–don’t forget to line the steamer with parchment paper so they don’t stick!
  7. Serve with rice and sauce!

*Note if you want these to look great, it’s going to take a lot of practice. No matter how they look, they’re going to look better once you steam them!

It’s Her Story: Rosa Parks

I remember learning about Rosa Parks in elementary school. It was Black History Month, and I could feel my cheeks burning in response to our lesson on Jim Crow laws and segregation. It’s not easy being one of the few students of color in class, especially when your teacher wants to make an example of you.
